2 Spring Cake Recipes with Berries

One of the best things that spring can offer is a big fruit diversity. There is a type of fruits which are very healthy and delicious and one can have fresh during the spring season – berries.

There are different types of berries which can match any person’s taste. If you like them a lot, then you may prepare some delicious dessert recipes with them. And that is exactly what we have prepared for you today – two cake recipes with berries. Check them out!

#1 Cream Tart with Berries

Ingredients:

1 cup of berries
1 ½ cups of raw cashew
1 cup of dates
1 ½ cups of raw almonds
½ teaspoon of kosher salt
½ cup of coconut milk
¼ cup of maple syrup
1 tablespoon of coconut oil
2 teaspoons of vanilla extract
2 teaspoons of lemon juice

Directions:

Step 1

First you need to get the raw cashew and to put it in a bowl. Fill the bowl with water and leave the cashews to soak for at least 6 hours, or even better – overnight. That is why you need to take into consideration that you will need more time to prepare the tart.

Step 2

Now you need to get a blender and put in it the raw almonds and the dates. Sprinkle the salt on top. Then mix them well so it all turns into a thick homogeneous mixture.

Get a tart tin and put the almond mix in it pressing it to the bottom and the sides. Once you are ready with this step, put the tart tin in the freezer.

Step 3

While you are waiting for the tart base to freeze, you can get the cashews and to drain the water from them. Put them in a blender and add in it the coconut oil, the maple syrup, the coconut milk, the vanilla extract and the lemon juice in it. Blend the mixture well until it turns into a homogeneous mixture.

Step 4

Now you need to take the tart tin from the freezer and spread the cashew mixture on top of the base layer of the tart. Spread it evenly. Then wash the berries and put them on top of the tart. You can also sprinkle some coconut flakes on top. And voila, the tart is ready!

#2 Spring Berry Cake

Ingredients:

1 ½ cups of flour
4 ½ cups of fresh berries
½ cup of butter
½ cup of sugar
¼ cup of brown sugar
3 eggs
½ teaspoon of vanilla extract
1 teaspoon of cinnamon
½ teaspoon of salt
¼ teaspoon of baking powder

Directions:

Step 1

First you need to get a big deep bowl. Put in it the butter and add the sugar and the brown sugar. Whisk the three ingredients well until it turns into a mixture.

Then add the first of the 3 eggs. Whisk the mixture and then add the second egg. Whisk the mixture once again and add the third egg. Whisk it again and then add the vanilla extract. Whisk all the ingredients well. By this time the whole mixture should be yellow and slightly liquid because of the eggs.

Step 2

The next thing you need to do is add the cups of flour into the bowl and season it with the salt, the baking powder, and the cinnamon. Mix them well with the other mixture until it all turns into dough. Lastly, you need to add the washed berries into the bowl and mix them well with the dough.

Step 3

Now you need to get a round baking tin and to apply some butter on the bottom. Then put the whole berry dough into it. Spread the mixture evenly in the tin.

Put the tin in the oven and bake the cake for 40 minutes at 180 0C. After the time is up, take the tin out of the oven. You can serve it with some powdered sugar sprinkled on top. And voila, the dish is ready!
