You know that breakfast are the most important meal of the day. You should never forget to have your breakfast, especially if you are going to have a busy day, because you will need a lot of energy to cope with it. But what to do when even in the morning you do not have time to prepare yourself a healthy breakfast, so you just grab something from the fast-food stand? There is still a way to eat healthy even when you are in a hurry. These two recipes will help you manage with the task.
Tacos with scrambled eggs
As you know eggs are very healthy and your body actually needs all the minerals and vitamins from them. Another reason why you should chose eggs to be part of your breakfast is because you can cook them in about 5 minutes, it depends on how you like your eggs. Add them in your favorite tacos and your belly will be grateful to you. And here is the recipe:
4 large eggs
4 tortillas (you can do them beforehand, in the evening, or you can buy such ready-made, just do not forget to warm them a little)
1 tablespoon butter
½ avocado, sliced in small pieces, or you could just use a grater which would be faster without worrying about the size of the pieces
¼ cup salsa
salt and black pepper to your taste
2 tablespoons cilantro
Get a medium bowl, it could be bigger if you have trouble working with smaller dishes, and beat the eggs. Add the salt and the pepper and beat them a little more.
When this is ready, get a large nonstick skillet (because you will be using not olive or sunflower oil, just butter), and heat it at medium-high heat. Put the butter, which will almost immediately melt there. Then put the eggs in the heated skillet and stir them until they are perfectly cooked, you will find this out by the way you stir them, the harder it gets, the readier they are. This will take you about 3-4 minutes. Or if you want you cannot scramble it but leave it the way it is, and since the skillet is nonstick one, you will not have problems with getting them out of it.
Then put the eggs in the tortillas by dividing them equally among them. Then do the same thing with the avocado, the salsa, and the cilantro – divide them between the tortillas equally. And this is it – fast, very delicious and on top of that healthy.
Egg white omelet with mushrooms
Since the traditional American breakfast includes eggs, and you can cook them extremely fast, we both of the recipes include them. But this one is only with egg whites, so it makes it have a little less calories. Mushrooms on the other hand are also very delicious and healthy, so you should eat them from time to time. If you are already curious what is the recipe, here it is:
4 large egg whites (you can give the egg yolks to a member of your family who likes them, or you could even use them in a homemade hair mask)
4 sliced mushrooms
2 sliced scallions
2 tablespoons olive oil
¼ cup Cheddar
salt and black pepper
Get a nonstick skillet and heat it on the stove. Put the olive oil in it and heat it over medium heat. Then add the scallions and cook them for about 2-3 minutes. You will be sure that they are ready when you begin to change their color, it turns a bit bronze. Remove the skillet from the stove for a while.
Then get a medium bowl and beat the egg whites in it with the salt and the pepper. Put the mixture in the skillet and the olive oil and heat it again. Cook it for 2-3 minutes until the egg whites are hard to scramble. And remove from the stove.
Before you eat it put the Cheddar which will melt a little and the breakfast will be even more delicious. And the breakfast is served.
