Creamy Soup Ideas to Warm You Up in the Winter

A lot of women find it hard to lose weight in the winter. Because of the heat in the summer people do not have a lot of appetite. Creamy chicken mushroom soup

If you like both chicken and mushrooms, you will like this recipe very much. It will take you about half an hour to do it, while the total number of servings is 6, so you can eat it even a couple of times. So, here it is the recipe.


8 ounces of chicken thighs with the bones and skin removed; cut them in small pieces (about 1-inch chunks)

8 ounces of cremini mushrooms, sliced thinly

2 tablespoons of butter

1 diced onion

3 diced carrots

1 tablespoon olive oil

3 gloves of minced garlic

2 stalks of diced celery

4 cups of chicken stock

¼ cup of four

½ teaspoon of dried thyme

1sprig rosemary

kosher salt and black pepper


Step 1

Get a large stockpot and heat in it the olive oil over medium heat. While you are waiting for the olive oil to get heated, season the chicken thighs with salt and pepper to your taste. Some people do not like it too salty or spicy. Then add the chicken in the stockpot and cook it until it turns golden. It will take about 2-3 minutes, but only if the olive oil is heated well. Then leave it aside while you proceed with the other steps.

Step 2

Use the same stockpot, without the chicken, and melt in it the butter over medium heat again. When it is nicely melted add the garlic, the onion, the mushrooms, carrots and celery. Stir them all well and cook them for about 2-3 minutes. Then add the thyme and again stir well the ingredients.

Step 3

Then add the flour into the mixture and cook it for about a minute by stirring all the time. The mixture should need quite thick by this time. Then you need to add the chicken stock to the mixture. Stir a little and then add the chicken thighs. Cook the soup for about 4-5 minutes while stirring from time to time.

Step 4

The more you cook the soup, the thicker it would get. A couple of minutes before you remove it from the heat, season it with some salt and pepper to your taste. When you feel that it is getting more and more difficult to stir it, it would probably mean that it is ready. You can taste it to make sure it really is.

Step 5

Serve it garnished with rosemary and some rusk.

Creamy cauliflower soup

This soup is perfect for vegetarians, so if you are you can definitely try it.


1 kg of cauliflower chopped

250 g potatoes, washed, peeled and diced

1 large onion, peeled and chopped

3 garlic cloves chopped as well

2 cups of milk

2 cups of chicken stock

kosher salt and pepper

thyme to garnish (optional)


Step 1

Get a big stockpot and pour the milk and chicken stock in it. Heat them a little and then add the cauliflower, potatoes, onion, and the garlic. Stir them all well. When the mixture starts boiling, cook it for about 10-15 minutes by stirring from time to time. When the cauliflower gets quite soft, you will know that it is time to remove it from the heat.

Step 2

Now you will need to use a blender to make the soup absolutely creamy. Add the salt and the pepper to the mixture and then pour it into the blender. If you do not want the soup to be very thick, do not blend it a lot, but even if you do, do not worry. You can still make it a little more liquid by adding some more milk and chicken stock.

Step 3

Serve while the soup is still hot. Garnish it with thyme, and if you like you can add some other spices to your taste. If you find the soup too liquid, you can add a handful of croutons to it. They will make the soup thicker.
