Delicious and Cozy Soups for Fall

There are certain types of dishes people have during the different seasons of the year. Salads, for example, are more suitable for the summer because they are light and fresh and would not make a person feel too full or uncomfortable after having them. Other dishes, like richer and more caloric ones, are rather suitable for the cold months of the year.

In the fall people prefer having warm and cozy dishes that will help them feel full and good. One of these dishes is soups. They are often very healthy because can satisfy your hunger and at the same time will warm you up in the cold weather.

Today we have prepared for you a couple of soup recipes suitable for this season. They are delicious, healthy, and easy to make. Here they are!

#1 Tomato Soup

Ingredients:

28 ounces of crushed tomatoes (2 cans)
6 cups of veggie broth
2 tablespoons of tomato paste
¼ cup of basil
1 celery
3 cloves of garlic
1 onion
1 tablespoon of oil
½ tablespoon of baking soda
1 string of thyme
salt to taste
black pepper to taste

Directions:

Step 1

First you need to get the onion and to chop it nicely. Then get a big pot which can hold all the quantity of the soup. Heat the olive oil in the pot and then add the chopped onion.

Step 2

Get the celery and cut it into small pieces. Then add them into the pot as well. Mince the garlic cloves and add them into the pot with the celery and the onion and stir the ingredients a little.

Then you need to season the mixture in the pot with some salt and pepper to your taste. Before stirring the ingredients one more time, add the tablespoons of tomato paste into the pot. Stir the mixture nicely.

Step 3

After that you need to chop the basil, if you have not chopped it beforehand, and then to add it into the pot. Then you need to add the two cans of crushed tomatoes into the pot and the cups of broth.

And after that add the baking soda. Using a big spoon, preferably a wooden one, stir all the mixture well. Finally, you need to add the string of thyme and stir the mixture some more time as well.

Step 4

Once the soup starts boiling, put the lid of the pot on and let the dish simmer for about 15 minutes. After this time passes, take the lid off and remove the string of thyme from the soup.

Stir the soup a little and you can take it off the hotplate. The dish would be ready to be served, but if you prefer, you could actually have it blended using a countertop blender. It is up to you to decide this.

You can then serve it garnished with some fresh basil and this is it! You can enjoy your dish.

#2 Potato soup

Ingredients:

2 pounds potatoes
3 leeks
¼ cup of chives
6 cups of veggie broth
2 cups of water
2 teaspoons of butter
3 cloves of garlic
1 string of thyme
1 bay leaf
some hot sauce (optional)
salt to taste
black pepper to taste

Directions:

Step 1

First you need to wash and peel the potatoes. Then cut them into cubes which can be as big as you want, but it is better not to be too big. Put the potato pieces in some bowl with water and leave them aside while you are preparing the rest of the dish. Get the leeks and chop them. Leave them aside for now.

Step 2

Get a big pot and heat the butter in it. Once the butter is almost melted, get the chopped leeks and add them into the pot. Stir them with the butter a little. Then let them simmer for about 6-8 minutes with the lid of the pot on. While you are waiting for those several minutes to pass, get the garlic cloves and mince them.

Step 3

After those 6-8 minutes pass, take the lid off and add the minced garlic cloves into the pot. Then drain the water from the potatoes and add them into the pot. Season the ingredients with some salt and pepper to taste and then mix them well to distribute the spices evenly.

Step 4

After that you need to add the cups of veggie broth and the cups of water. Stir the mixture a little more and then add the string of thyme and the bay leaf into the pot. Stir the dish some more and then put the lid back on. Let the soup simmer for 15 minutes.

Step 5

When the 15 minutes pass, take the lid off and using a spoon remove the herbs from the soup. This way only their flavor will remain. Stir the soup some more and take it off the hotplate.

Step 6

Then, using a blender, blend the soup nicely so it turns into a kind of cream soup. When it is ready, get the chives which need to be chopped slightly beforehand and add them into the pot. If you choose to add hot sauce, now will be the time to do it.

Stir the soup well and you can serve it. Enjoy your meal!
