Summer is the season when people like eating a lot of salads which are delicious and healthy and especially light which is perfect for this time of the year. However, from time to time a person needs some change in their menu. There are other types of recipes which include some type of meat and vegetables which are cooked in a healthy way.
Today we are going to give you some examples of such kind of recipes which are perfect for the summer and as a matter of fact do not involve any special cooking skills but only a grill. Here are some skewers recipes to try out this season.
#1 Tropical Shrimp Skewers
2-3 cups of shrimps
2-3 cups of pineapples
3 tablespoons of cornstarch slurry
4 cloves of garlic
1 tablespoon of chili sauce
¾ cup of water
2 tablespoons of vinegar
½ tablespoon of salt
¼ cup of coconut cream
First, you need to get the skewers you are going to use for the recipe and to soak them in water while you are preparing the rest of the ingredients. This way you will be able to thread the pieces on them.
Peel the pineapple and cut it into pieceswhich need to be as big as the shrimps. Then get a blender and put the pineapple pieces in it. Add the garlic cloves, the chili sauce and the ¾ cup of water. Blend them until the mixture becomes homogeneous.
After that you need to get a pan and heat it on the hotplate. Put the pineapple sauce in it. Then add the vinegar, the salt and the coconut cream. Mix them well.
Then you need to get the lime and grate its zest. Make sure you grate all of it. And then squeeze the juice from the lime. Add both the zest and the lime juice into the pan with the rest of the ingredients and mix them well.
After that you need to get a small bowl of water and to mix the cornstarch slurry in it. Then add it into the pan with the rest of the ingredients. Mix them well and let the mixture boil. After that you need to take the pan off the hotplate.
The next thing you need to do is to take the wooden skewers out of the water. Get the shrimps and wash them. And simply start putting pieces of pineapples and shrimps on the skewers.
Put a piece of pineapple, then a shrimp, and continue this way until the skewer is full. Make sure you leave a couple of centimeters empty space on each of the two tips of the skewer.
Then, using a kitchen brush, apply some of the pineapple mixture on the shrimps and pineapple pieces on the skewer on each side. Do the same with the rest of the
The last thing you need to do is to grill the shrimp skewers for 2-3 minutes on each side. Then you can serve them with a bowl of the rest of the pineapple sauce as a dip.

#2 Soy Chicken Skewers
3 chicken breasts
1 red onion
1 red bell pepper
1 orange bell pepper
1 orange bell pepper
2 tablespoons of oil
1/3 cup of honey
1/3 cup of soy sauce
3 garlic cloves
1 teaspoon of black pepper
First you need to cut the chicken breasts into pieces which need to be as big as a bite. Then put them in a big bowl. Pour on top of them the olive oil, the honey, the soy sauce. Then chop the garlic cloves and add them into the bowl with the chicken. Season it with black pepper.
Then stir everything in the bowl carefully and nicely. After that put the bowl in the fridge for an hour to let the chicken absorb as much from the sauce as possible.
Now cut the red onion and the bell peppers into pieces which again need to be as big as a bite or so. Take the bowl with the chicken out of the fridge and start putting pieces on the skewers.
Put a piece of onion first, then a piece of each one of the three different bell peppers and finally a piece of chicken breast. Continue putting the ingredients in the same order until the skewer is full. You again need to leave a centimeter or so empty where the tips of the skewer are.
When all the skewers are ready you need to apply some more of the soy sauce marinate on them using a cooking brush. Then you can grill them, or if you prefer back them at 2000 C for about 25 minutes. If you decide to grill them, do not forget that you need to grill them on each side.
When the skewers are ready, you can season them with some chopped fresh parsley and serve them. Enjoy!
