Winter is the season when people prefer to have hot meals in order to warm themselves up. And this is also the season when people have soups the most because of all the bugs that infect people are easily defeated with the help of some chicken soup.
This is maybe why some people do not like soups – they associate them with illnesses and being sick. In order to break this stereotype, we have prepared for you a couple of soup recipes which will break your idea of a soup. Check them out!
#1 Baked potatoes cream soup
3 garlic cloves
3 tablespoons of butter
¼ cup of flour
2 and ½ cups of chicken broth
8 ounces of cream cheese
1 tablespoon of olive oil
2 teaspoon of salt
1 and ½ teaspoons of black pepper
cheddar cheese and bacon for garnishing
First, you need to get the potatoes and to bake them. Get a baking tin and line it with some baking paper. Then put the potatoes on top of it. If you wish, you could wash them beforehand. Then apply the olive oil all over the potatoes and spread it equally on each side of them.
Then get a teaspoon of salt and sprinkle it equally on the potatoes again on each side. Do the same with a half of teaspoon of black pepper. You could use your hands to rub the potatoes with the seasonings. And when the potatoes are seasoned you need to bake them in the oven at 2200 C for about 40-50 minutes.
When the time passes, take the tin out of the oven and leave the potatoes aside to cool down a little. Then peel them. Once they are all peeled you need to put them in a bowl and to mash them well. Leave the bowl with the mashed potatoes aside for now.
Now get the onion and chop it. Do the same with the garlic. After that get a deep pot and heat some olive oil in it. Then put the onion and the garlic into the pot and stir them well.
Once the mixture starts steaming add the butter into the pot and stir the mix once again. Add the flour and continue stirring until the mixture turns slightly brownish. After this happens, pour the chicken stock and stir well the soup. Let it start simmer and then add the cream cheese. Stir everything well once again.
Right after that add the mashed potatoes into the pot. Stir the soup once again well. It will become very thick because of the potatoes. Season the soup with a tablespoon of salt and a tablespoon of black pepper without stopping stirring the soup.
In a minute or so you need to take the pot off the hotplate. You can serve the dish while it is still hot. You can garnish it with some cheddar cheese and chopped bacon on top. You could also add some chopped spring onion if you like. Enjoy!
#2 Broccoli cream soup
2 broccoli heads
2 cups of cheddar cheese
½ cup of carrots
4 tablespoons of butter
½ of onion, diced
4 tablespoons of flour
2 cups of heavy cream
2 cups of veggie stock
2 tablespoons of salt
1 tablespoon of black pepper
¼ tablespoon of nutmeg
First you need to wash the broccoli heads, then to cut the stems, leaving only the heads of the broccoli. Then separate the florets of the broccoli using your hands, or a knife if you prefer. If you want them to be smaller, you can cut the florets in halves. Then leave the broccoli aside.
Now you need to get a deep pan and to heat the butter in it. Let it melt completely and then add the diced onion into the pan. Stir it a little and let the oil sizzle. Then add the flour and stir the mix once again.
After the mix turns lightly brownish, add the cups of heavy cream and after that the veggie stock. While you are adding the two ingredients, do not stop stirring the mixture with your other hand.
Continue stirring the mixture for some more time and then add the broccoli into the pan. Then you need to add the carrots which you need to grate beforehand. Stir the mixture well right after that and then season it with the salt, the black pepper, and the nutmeg. Stir the soup once again well.
Put the lid on the pan and let it simmer for about 15 minutes. After this time passes, take the lid off and stir the soup again. Add the cheddar cheese by continuing stirring the soup. In a minute or so take the pan off the hotplate. And the soup will be ready! Serve it while it is still hot. Enjoy your meal!
