There are a lot of people who have only heard of particular kinds of foods but have not tried them. Some people simply have not had the opportunity to try them and others presume that they would not like the taste of them when they try them.
Such things are some exotic dishes or vegetables, especially green vegetables. Such kind of vegetable is artichoke. There are a lot of people who have only heard of this vegetable and decide that it would not be delicious.
To prove these people wrong and to show you that artichokes can not only be very healthy, but also extremely delicious, we have prepared for you a couple of recipes to try on your own this week. Check them out!
Artichoke and Spinach Lasagna
12 lasagna noodles
2 cups of marinara sauce
2 cups of ricotta cheese
1 cup of spinach
1 cup of artichoke
2 cloves of garlic
1 cup of mozzarella
1 cup of parmesan
1 teaspoon of salt
½ teaspoon of black pepper
To make this delicious recipe you need to get a bowl first. Pour the ricotta cheese in it. Then add the cup of spinach and the cup of artichoke which need to be cut beforehand into small pieces. Some people prefer to tear them with their own hands and not to use a knife.
Then chop the cloves of garlic, or mince them, and add them into the bowl with the other ingredients. Then add ½ cup of mozzarella and ½ cup of parmesan into the bowl. Sprinkle the ingredients with the salt and the pepper. When all these ingredients are in the bowl, mix them together with the use of spoon. It may take you a couple of minutes. When the ingredients turn into mixture, you are ready to move to the next step.
Now get a noodle and spread a spoonful of the artichoke mixture on it. Make sure you spread it evenly all over the noodle. Then roll it inwards to have a roll. Then do the same with the rest of the noodles. You should not put too much of the mixture in the rolls because it will start falling out of it.
When all the noodles are rolled with the mixture inside them, get a baking tin. Pour the cups of marinara sauce on the bottom of the tin and spread them evenly. Then put the lasagna rolls vertically on the tin. For this purpose you will need a small and relatively deep tin. You may use a pan instead.
When you have placed all the rolls in the tin, pour the other ½ cup of parmesan and then the other ½ cup of mozzarella on top of the lasagna rolls. Bake the dish for 35 minutes at 180 0C. Serve them while they are still warm and garnish them with fresh parsley.

Ingredients (for 1 portion):
½ a lemon
a handful of parmesan
2 tablespoons of fresh parsley
1 tablespoon of minced garlic
1 tablespoon of olive oil
a pinch of salt
a pinch of black pepper
First you need to clean the artichoke. Wash it. Cut the stem and the top part of it so there is enough room inside it where you can fill it with the rest of the ingredients. You may also cut half of the outer leaves of the artichoke. Then you are ready to go.
Squeeze the ½ lemon and pour the juice on it inside the artichoke. Then pour evenly the tablespoon of olive oil again inside the artichoke. Sprinkle a pinch of salt and a pinch of pepper on top of it to season it.
Then you need to stuff the minced garlic inside the leaves of the artichoke. After that stuff inside it the fresh parsley. Make sure you stuff both ingredients well inside of the artichoke.
And finally you need to stuff some of the parmesan inside the artichoke. The rest of the parmesan spread on top of the artichoke. You may sprinkle some more black pepper on top of it as well.
Put the artichoke on top of a sheet of aluminum foil and wrap it inside it. Bake the artichoke for 1 hour and 20 minutes at 220 0C.
When you take the artichoke out of the oven, unwrap it and serve it. You need to remove the outer part of the artichoke, you can scrape the inside of it with the help of a spoon. Sprinkle some fresh parsley on top.
And it is done!
