Nowadays a lot of people try to eat as healthy as possible because they have understood how important is one’s lifestyle for their health and well-being. And this is where the quality of food comes in. That is why cooking is encouraged especially in home environment with good products.

To show you that cooking healthy and delicious meals is not difficult, we have prepared for you a couple of salad recipes which will not take you a lot of time. They are suitable for both dinner and lunch. So, check them out!

#1 Spicy chicken salad

Ingredients:

2 chicken breasts

1 iceberg lettuce

¼ cup of Greek yogurt

¼ teaspoon of minced garlic

2 tablespoons of lime juice

1 tablespoon of olive oil

1 avocado

½ red onion

10 ounces of cherry tomatoes

8 ounces of black beans

2 teaspoons of paprika

1 teaspoon of cayenne pepper

1 teaspoon of garlic powder

1 teaspoon of oregano

1 teaspoon of thyme

1 teaspoon of salt

Directions:

Step 1

First you need to cook the chicken breasts. For the purpose you need to get a bowl and mix in it all of the spices: the paprika, the cayenne pepper, the garlic powder, the oregano, the thyme, and the salt. Mix them all well. Then you need to put in another container 1 ½ teaspoons of the mixed spices. You will need them later.

Step 2

With the remaining spice mixture you need to season the chicken breasts. Apply the spices on both sides of the breasts evenly. The next step is optional. If you want your chicken to be juicier, you can stir-fry it in a pan for about two minutes on each side.

If you want you can skip the stir-fry part of the cooking and simply put it in the oven. Bake it for 20 minutes at 190 0C. When the chicken breasts are roasted, take them out of the oven and leave them aside while you are preparing the next part of the salad.

Step 3

Now get a clean bowl and pour in it the Greek yogurt. Add the minced garlic, the olive oil, the lime juice, and the 1 ½ teaspoon of the preserved seasoning. Stir all the ingredients slowly and carefully until the mixture becomes homogeneous.

Step 4

Now you need to wash the iceberg lettuce with water and to cut it into pieces. Cooks say that it is best if you do not cut it, but if you tear it with your hands. This way it will be healthier. Then put the lettuce pieces into a big bowl.

Then cut the chicken breasts into slices, you can make them as big as you want, and then add the pieces into the bowl with the iceberg lettuce.

Step 5

Now you need to chop the red onion and to add it into the bowl with the rest of the salad. Then peel the avocado, remove the stone and cut it into slices or cubes, the way you prefer, and add it into the bowl with the rest of the salad. After that you need to wash the cherry tomatoes and to add them into the bowl as well. You may cut them in halves if you prefer.

And finally add the black beans. Pour the Greek yogurt sauce on top of the other products and then mix everything well. You need to make sure the bowl you use is a really big one, otherwise, some of the ingredients may accidentally fall out of it.

And when you finish with mixing the salad, it would be ready. When you serve it you may also garnish it with some chopped parsley to your taste. And this is it!

#2 Tomato salad with cucumber and avocado

Ingredients:

1 English cucumber

3 Roma tomatoes

3 avocados

½ red onion

a handful of chopped cilantro

the juice of 1 lemon

olive oil

salt to taste

black pepper to taste

Directions:

First you need to wash the cucumber and the tomatoes. Then cut the cucumber into rolls and then cut the rolls in half, so you have a semi-circle. The get a big bowl and cut the cucumber pieces in it.

Then cut the tomatoes into halves and then into cubes. Add them into the bowl with cucumbers.

Get the avocados. Cut them in halves. Remove the stones and scrape the flesh from the peel. Cut them diagonally in halves once again and then cut them into cubes. Add the pieces of avocado into the bowl with the rest of the other ingredients.

After that get the onion and peel it. Chop it into pieces and add it into the bowl as well.

Chop the cilantro thinly and add it to the other ingredients as well. Season the salad with the lemon juice, olive oil to taste, and some salt and pepper again to your taste. Mix everything well until all of the ingredients are seasoned well.

And voila, the salad is ready. Enjoy!
