There are a lot of people who love the fall because of the beautiful colors of the nature and the coziness this season brings with it. Just imagine to be cuddled with your partner on the sofa, drinking some hot cocoa, reading a book, or just enjoying each other’s company. It almost seems like paradise.

#1 Thick Broccoli Soup

The first recipe is perfect for those of you who are not huge fans of soups and prefer something not that watery. Well, this soup is called a thick one because it does not consist of much broth or water. Here is what you need to do to prepare it.

Ingredients:

4 cups of broth
10 ounces of vermicelli
1 pound of asparagus
10 ounces of broccoli
4 ounces of mushrooms
¼ cup of heavy cream
½ cup of parmesan
3 tablespoons of chopped parsley
1 onion
4 cloves of garlic
1 teaspoon of olive oil
½ teaspoon of red pepper flakes (optional)
salt to taste
pepper to taste

Directions:

Step 1
First you need to get a cooking pot and to heat in it the broth. It is important that you add the other products before it starts steaming. Add the vermicelli and the broccoli. You can cut the broccoli in halves, or leave it the way it is, this is up to you. Then cut the asparagus in pieces that are 3-4 centimeters long. Then add it in the pot. Stir everything.

Step 2
Now chop the onion and add it into the pot as well. After that add the cloves of garlic which also need to be chopped beforehand. Add the olive oil. Finally add the pepper flakes and some salt and black pepper to your taste and mix everything.

Step 3
Now you need to add the mushrooms. They need to be peeled and sliced beforehand. Then again mix everything well. You will now notice that the vermicelli is softer and slightly bigger. Let the mixture boil for about 10 minutes.

Step 4
After that add the heavy cream. Then add the parmesan and the parsley and stir everything well. Cook it for 3 more minutes while stirring most of the time. Remember that this is a thick soup and may even burn a little if you are not careful.

And your soup is ready. Serve it while it is still hot and you may garnish it with some more parmesan.

Creamy Chicken Pot Pie Soup

Ingredients:

4 cups of chicken broth
1 can of mix of frozen vegetables
1 big potato
2 chicken breasts, boiled beforehand
1 tablespoon of butter
1 chopped onion
½ cup of chopped celery
½ teaspoon of basil
½ teaspoon of parsley
salt to taste
black pepper to taste

For the cream sauce:

2 tablespoons of flour
3 tablespoon of butter
3 cups of whole milk
½ cup of heavy cream

Directions:

Step1
First you need to get a large pot and to heat the tablespoon of butter so it melts completely. Right after that the chopped onion and celery and stir them. Let them sizzle for a minute and then add the chicken broth.

Step 2
Then add the frozen mix of vegetables and the potato. You need to peel the potato beforehand and to cut it into cubes. Stir everything.Once the mixture have simmered for a couple of minutes, add the cooked chicken breasts. They need to be cut into small pieces beforehand. Stir it well and continue cooking it.

Step 3
While the soup is boiling, you need to prepare the cream sauce. You need to get a separate pot and heat the tablespoons of butter. Let it melt and then add the first tablespoon of flour. Whisk is well together and then add the second spoon of flour by continuing whisking the mix.

Then add the milk and the cream and it is important not to stop whisking it. Continue whisking after you have added the milk and the cream until the mixture thickens. It needs to become nice and creamy. This will be the sign that it is ready.

Step 4
Add the creamy mixture into the chicken soul and stir it well. Once this is ready, season the soup with the basil, parsley, and add salt and pepper to your own taste. You may also add some garlic powder or onion powder if you like it.

After you have seasoned the soup, it is more or less ready. It should be nice and thick and all the ingredients should be cooked well. You can taste it to see if there is anything else you want to add. And then simply take it off the hot plate.
