It is no secret that vegetables are one of the healthiest kind of food. Of course, they should not have any pesticides and be organic in order to be really healthy for one’s body. They contain a lot of vitamins and mineral and often few calories. This way a person can have them without gaining weight and, of course, staying strong and healthy.
And since we like delicious and healthy ingredients and recipes, we decided to show you a couple of recipes to try on your own this week. As you can guess, they are going to be with vegetables, but the main ingredient in both of them is going to be a particular kind of vegetable – zucchini. Here are the two recipes and how to prepare them.
#1 Cheesy Zucchini Sticks
1/3 cup of parmesan
1 tablespoon of garlic powder
1 teaspoon of black pepper
½ teaspoon of red pepper flakes
½ teaspoon of salt
½ cup of mozzarella
1/3 cup of cheddar cheese
ketchup or marinara sauce
The first thing you need to do is to wash the zucchini well because you would not need to peel them. It is best to cook them with the peels. Then remove the parts of it which were connecting the zucchini on the stem of the flower and to remove any other dark or rotten pieces of the zucchini. When this is ready, you need to grate all the zucchini. And then put them in a bowl.
Then you need to add the egg, the garlic powder, the pepper flakes, the salt and the parmesan into the bowl with the grated zucchini. Mix the ingredients in the bowl well until they are seasoned equally.
Then get a clean hand towel and put the mixture on it. Wrap the zucchini mixture in the towel and start squeezing it so the excess water from it to be drained. Then the mixture would be ready to be cooked.
Get a baking tin and line it with some baking paper. Put the zucchini mixture on top of it and spread it thinly all over the tin. Make sure all of the mixture is placed on top of baking paper. Then put the tin in the oven and bake it for 35-40 minutes at 2200C. When the time ends, get the tin out of the over.
Now sprinkle the mozzarella cheese and the cheddar cheese on top of the baked zucchini mixture and make sure you sprinkle them evenly. After that you need to bake the dish for 10 more minutes at 1750C. The time would be just enough to make the cheeses melt a little bit.
When the dish is ready, you need to take it out of the oven and cut the crust into pieces. You could cut them however you like but probably it would be best to cut them in rectangular pieces. You can serve them with some ketchup, tomato sauce, or marinara sauce. Dip the pieces into the sauce and then have them.
#2 Zucchini Chicken Alfredo
2 tablespoons of butter
2 chicken breasts
¾ cup of cream
1 cup of parmesan
2 tablespoons of parsley
3 cloves of garlic
1 teaspoon of salt
1 teaspoon of black pepper
First you need you need to wash the zucchini and to cut the peduncle. Then cut them into lines. If you prefer you could cut them alongside or into small lines. Once you have cut the zucchini into pieces, put them into the microwave for 2 minutes to make them softer.
The next thing you need to do is to cut the chicken breasts into pieces. They need to be about 6 centimeters long, but if you prefer them to be smaller, you could cut them this way as well. Then chop the garlic cloves and the parsley.
Now get a deep pan and heat the butter in it. Once the butter in completely melted add the chicken breast pieces and stir them a little to get some melted butter on them. Then season them with the salt and the pepper and stir them once again.
Add the chopped garlic cloves into the pan and mix them with the chicken breasts. Then add the cream and stir everything together. Add the parmesan and the chopped parsley and stir the ingredients once again together.
Let the dish sizzle for a couple of minutes until the excess water from it evaporates and the cream turns beige. After that you simply need to take the pan off the hot plate. Add the microwaved zucchini pieces into it and mix them well with the rest of the ingredients.
And the dish will be ready. You can serve it. Enjoy!
