Dinner Plan – Done! Thai Chicken Please

Imagine this scenario: You are home alone tonight and you are not in a mood for going out, but you have to eat something for dinner. The good part is that you are in a great mood for cooking a dinner just for yourself. Some people will say that it’s not worth it to cook food only for yourself, but I’ll say that you can do exactly what you want to do. If you wish to eat homemade cooked dinner, you must fulfill that wish. But after all if you are not comfortable to eat alone, call a friend or a neighbor and have the dinner together. Be sure that the meal that I’ll show you down below will be enough for at least 4 serves so make a shopping list and start with the dinner preparation.

I found this great recipe for chicken meal. I tried it and I loved it. See how it’s done and decide for yourself how much you love it. Take a look:


You will need:

1 package (12 ounce) rice noodles

2 tablespoons peanut oil

1 pound chicken bites (skinless and boneless)

¼ cup peanut oil

2 cloves of garlic, mashed

3 green chopped onions

4 eggs

2 tablespoons white wine vinegar

4 tablespoons fish sauce

6 tablespoons white sugar

1 tablespoon hot chili sauce

1 ½ teaspoons red pepper, crushed

1/8 teaspoon cayenne pepper

2 cups bean sprouts

¼ cup crushed peanuts

1 green onion

1 lime


The cooking time:

The noodles are really easy for preparation. Just boil them according to the instructions on the package. After that drain them and set them aside while you prepare the other ingredients.

Heat the peanut oil in a large pan on the stove over medium to high heat. Cook the chicken, the garlic and the green onions until golden brown. Remove from the pan and set aside.

Now heat the rest of ¼ cup of peanut oil in the pan and crack the eggs into the hot oil. Put in that the chicken, the noodles, vinegar, fish sauce, sugar, sweet chili sauce, red pepper and cayenne pepper and stir until the eggs spread through the whole dish. Cook until noodles are tender. Then add the bean sprouts and a squeeze of lime, stir for 2-3 minutes. And it’s done.

You can garnish with crushed peanuts, green onions and a lime wedge.

Pour a glass of nice white wine and enjoy your dinner!

I’ll give you one small advice. If the meal turns out to be really delicious and you liked it, write down the recipe in a notebook. Often the complicated recipes are forgotten and next time you want to prepare it again, it won’t be in the internet. Don’t trust the electronics, always store your important files both on paper and in your laptop or phone. Follow that simple rule and all your work and favorite stuff will be saved and available for the times you will need them.
