Easter Leftover Eggs Recreations

You know that the Egg hunt on the Easter holiday always ends up with a lot of eggs in your fridge, which you eventually throw away, because you and your family can’t eat them all. But throwing away food is one of the things that I hate most. So,  there are a few ways to re-cook the boiled eggs, check out my ideas:

Stuffed Eggs.

One of the best ways to make a boiled egg look more fancy is to mix the yolk with other ingredients and then put it back in the egg white. Here is one example:

You will need:

  • 12 hard boiled eggs, peeled and cut into half

  • 1/2 cup cooked chicken

  • 2 tablespoons of ranch dressing

  • 2 tablespoons of mayonnaise

  • 1-2  tablespoons of hot sauce

  • 1.4 cup celery

  • Salt and black pepper

As I mentioned before, you will need to cut the eggs in half. Remove the yolks and mix them with the other ingredients and put them into a food processor and mix them until you get a smooth paste. Then use a pastry bag to fill the egg whites with the created mixture.

Egg salad in grilled cheese sandwich.

 A sandwich is always a great decision  for reusing leftovers. Here is one idea for a great sandwich with the leftovers. You will need:

  • 1/4 cup mayonnaise

  • 3/4 tablespoon curry powder

  • A pinch of salt according to your taste

  • Some drops of hot sauce

  • 3/4 tablespoons of ground cumin

  • 1 tablespoon of mustard

  • 1  tablespoon lemon juice

  •  6-7 of the eggs

  • 1 stalk celery

  • 1 scallion

  • 1 tablespoon minced cilantro

  • Black and pepper to taste

Chop the ingredients and mix them with the herbs and the sauces until you create an even mixture. Place the bowl in the fridge for a couple of hours until it gets ready to use. Then grill the bread slices into a pan. A great decision is to grill the bread into olive oil and garlic. Garnish with green salad. Enjoy!

Egg Mini Pizzas

 I am in love with the one-bites foods, because they look so adorable and they are perfect for an afternoon snack or movie snack. Check out the ingredients and the preparation, but the basic rule is to put whatever you like and it will work out perfectly:

  • 4 English muffins

  • Olive oil

  • 8 tomato slices

  • 4 hard-cooked eggs

  • Grated mozzarella

  • Oregano

  • Salt

Cut the eggs into slices. Cut the muffins in half too, and place them on a cookie sheet. Sprinkle them with olive oil and then place tomato slices on them, then comes the turn for the eggs and top the mini pizzas with the mozzarella. Sprinkle with oregano and salt to taste. Bake them for a few minutes until the mozzarella melts. Enjoy this delicious and simple meal.
