Healthy and Nutritious Recipes for People on a Diet

There are a lot of people who think that if you are on a diet you are starving and do not have the right to eat delicious meals. We, of course, disagree with that. There are actually a lot of low-fat meals one can eat when they are on a diet which will help them have enough energy to go through their daily routines.

These recipes are perfect for those of you who have given up dough and sweet things, and especially for those of you who like chicken and vegetables. Here are the two recipes.

Roasted chicken and Vegetables

The first of the recipes is fast to do and it is suitable for having a nutritious and healthy dinner with guests. You will need less than an hour to prepare it. Here is what you need to do.

Ingredients (for 4 portions):

4 chicken breasts
100 grams of broccoli
1 yellow bell pepper
200 grams of baby carrots
200 grams of cherry tomatoes
1 big red onion
8 cloves of garlic
paprika powder
olive oil


Step 1

First, you need to prepare the vegetables. Get a baking tin where you will bake them. Make sure it is big enough for all the vegetables. Then wash and cut the onion. You could simply cut it into small pieces. And then put the onion in the tin.

Then wash the broccoli and put it in the tin next to the onion. It is better not to mix the vegetables to get this interesting rainbow effect of the colors.

After that you need to wash the bell pepper and to cut it into lines. Of course, you need to remove the inner part of it first. When you are ready with this put the bell pepper lines next to the broccoli.

Then wash the baby carrots and peel them if you like, but it is not necessary. And line them next to the bell pepper. Finally, wash the cherry tomatoes and put them in the tin as well.

Sprinkle the vegetables with salt and add the cloves of garlic. Then add some olive oil and thyme to taste.

Step 2

Now get 4 big pieces of cooking foil. Put a chicken breast on top of one of the pieces and add some olive oil on it. Season it with salt, black pepper and paprika as well. Make sure you season the chicken breast on each side.

Then add a piece of thyme and fold the chicken breast in the cooking foil. Repeat this step with the rest of the chicken breasts folding them separately.

Step 3

Now all that is left for you to do is to bake the chicken breasts and the vegetables. Get another baking tin for the chicken breasts and line them in it. You can bake the two dishes together if your oven has two separate parts where you can put the tins. Bake them at 200 0C for 30 minutes.

Step 4

When the time is up, remove the tins from the oven. Serve each chicken breast with some of the different kinds of vegetables. It is going to be a very colorful dish and very tasty as a matter of fact.

Teriyaki Salmon with Vegetables


2 pieces of salmon fillet
2 cups of broccoli
2 cups of carrots
¾ cup of brown sugar
3 tablespoons of soy sauce
½ cup of honey
2 tablespoons of sesame seeds
2 tablespoons of olive oil
2 teaspoons of salt
2 teaspoons of pepper


Step 1

First, you need to wash the broccoli and the carrots. Cut the carrots into circles. Get a baking tin and mix the vegetables in it. Add the olive oil, the salt, and the pepper as well.

Step 2

Now you need to make the sauce. You will need a bowl. Mix in it the brown sugar, the soy sauce, the honey, and the sesame seeds. Make sure you stir them well.

Step 3

After that you need to put the salmon fillets on top of the broccoli and carrot mix and pour the sauce on top of the fish separating it equally. Since the sauce will be liquid enough, some of it will fall on top of the vegetables. Leave it this way so that they can be seasoned a little as well.

Step 4

Bake the dish at 200 0C for about 12 minutes. Remove the dish from the oven and serve it. You can season the salmon with some green onions if you like.
