Don’t you just love the idea of a healthy cake, chocolate, cupcake or something like that? I bet you! I know I do. A morning starting with a great cup of coffee and a cupcake that is actually not that bad for you would be kind of amazing. Well there is no totally healthy cupcake invented yet, but you can do at home a variation of a cupcake that doesn’t make you guilty as hell for eating them.
Peppermint Hot Chocolate Cupcakes

Those sound like a winter heaven. And no matter how much you try to stay away from them you won’t be able. The peppermint hot chocolate cupcakes are not that tough to make and you will certainly enjoy them.

Here is what you need:

2 cans coconut milk (or 1 can coconut cream)
½ tsp pure peppermint extract
3tbsp powdered sugar
6tbsp cocoa powder (unsweetened)
½ tsp salt
½ tsp baking soda
1 cup granulated sugar
1tbsp pure vanilla extract
2/3 cup water

Only by reading the ingredients you must feel okay for wanting to make them?

How to?
The coconut milk should stay in the refrigerator for a whole night. It should get very thick.
Transfer it into a bowl (only the cream part).
Whip up your sweetener.
The filling can be made prior to everything else (it can stay in the fridge for 4 days).
So to fill it make a hole in every cupcake. Put in the filling and then hide the indention with more peppermint filling.

Red velvet cupcakes
Anything red velvet is always a good idea. If you are one that loves cake or whatever you probably have tried red velvet cupcakes or cake and you love it. So why not invest some time into making your own delicious red velvet cupcakes?

Here is what you need:
1tbsp red food coloring (natural)
3 tbsp cocoa powder
chocolate chips
2tbsp water
1 ½ tsp pure vanilla extract
½ cup sugar
½ cup mayo-style spred
¼ cup beet juice
½ cup flour
¼ tsp salt
¼ tsp baking soda

How to?
Preheat oven to 350F.
In a bowl combine flour, cocoa, salt, baking soda, sugar.
In a second bowl – chocolate chips, mayo spread, beet juice, water and red food coloring.
Now combine the two mixtures. Sift until smooth.
Put it into a tin muffin pan.
Bake 14 mins.

Voila! You have got one of the most delicious cupcake recipe in only a couple of simple steps. Enjoy!
