A lot of people say that they do not have time to cook that is why they either grab something on foot, or go out for dinner and lunch. However, they do not have the same excuse for the weekend. This is the time of the week that one has enough time to cook, try out different recipes and learn how to cook healthy meals.

Avocado Carbonara Spaghetti
The first recipe is a version to the classical spaghetti carbonara recipe. And there is a healthy twist to it – avocado. As you probably know, avocado is a very healthy fruit and you can add it to a lot of different dishes, especially salads. Here is what you need to do to prepare this dish.
1 package of spaghetti
3 big slices of bacon
½ cup of parmesan
1 garlic clove
1 egg yolk
½ cup of cream
1 tablespoon of olive oil
salt to taste
pepper to taste
First, you need to cook the sauce. For this purpose you are going to need a blender. Peel the avocado and remove the stone. Add it into the blender together with the garlic clove, the egg yolk and the squeezed lemon juice. Blend the ingredients a little before you gradually start adding the cream. In the end you should have relative thick greenish mixture because of the avocado. Then it means that it is blended nicely and you can move on to cooking the spaghetti.
Get 1 liter of water and boil it. Add some salt into the water. When you notice that the water has started boiling add ½ pound of spaghetti in the pot and cook them. It would take about 10-15 minutes to cook the spaghetti depending on the brand. When they are ready, get the pot off the hot plate and remove the spaghetti from the water.
Now get the slices of bacon and cut them into small pieces. Get a non-sticky pan and fry the pieces of bacon in it for a while. There is no need to add extra cooking oil because the bacon has enough fat. You also need to have in mind that it is going to shrink a little. Fry the pieces on both sides until they turn brownish. Then remove the pan from the hot plate.
The last thing you need to do is to mix all the ingredients together. Add the parmesan to the spaghetti first while they are still hot and mix them. This way the parmesan will melt and the spaghetti will be even more delicious. Then add the sauce and the bacon. Season the spaghetti with some salt and pepper. Mix everything well. And you are ready. Enjoy your meal!
Avocado and Bacon Salad
The next recipe is even easier to make. And it is perfect for the summer since it is lighter and made with seasonal vegetables.
1 romaine lettuce
4 big slices of bacon
2 cups of cherry tomatoes
For the dressing:
4 tablespoons of olive oil
2 tablespoons of balsamic vinegar
1 teaspoon of mustard
1 teaspoon of salt
lemon juice from 1 lemon
First you need to fry the bacon. Get a non-sticky pan and heat it. Add the bacon without adding any additional cooking oil. Fry the bacon on both sides until it has a nice golden-brownish crust. Then remove the slices from the pan and put them on some cooking paper to absorb some of the fat which will have melted from the bacon. Leve it for some time like this and prepare the rest of the salad.
Now you need to wash the romaine lettuce, the tomatoes and the cucumber. Cut the lettuce, or if you prefer you could use your hands for the purpose and no knife. Cut the cherry tomatoes into 4 pieces. And lastly, cut the cucumber into crescent pieces. Add all of the vegetable pieces in a big bowl. Then peel the avocado and remove the stone. Cut it into cubes and add it into the bowl.
Finally, you need to make the dressing. Mix all the ingredients for the dressing in a small bowl and stir them well. Then carefully pour the dressing over the vegetables in the big bowl by spreading it relatively equally. Mix add the ingredients well and serve.
